Vattayappam
I don't know whether this dish is know in this same name in all parts of Kerala. But we call it Vattayappam, probably because it is usually made in a round dish. This dish reminds me of my paternal grand mother. She alwys used to make tis when me my sister and cousins were kids. I recall those vaccation times, when we used to play around and she would serve us this sweet confectionery with tea in the evening.

- Cooked brown rice- 2 tbp
- Rice flour- 1 cup
- Yeast- 1/4 tsp
- Grated coconut- 1/2 cup
- Salt- to taste
- Sugar- 1/4 cup
- Water- 1/2 cup
Method:
- In a grinder grind the grated coconut and all the other ingrdients.
- Make sure that the batter is thick like cakes. If you scoop it on a spatula, it shouldn't come off. easily unless we shake it. That's the consistency required.
- Keep the batter to rise for 6 to 8 hours, preferably over night
- Apply few drops of oil on to a steel plate/ 2 inch deep
- Pour the batter and level it. On top place few golden raisins for decoration.
- Steam water in an idli maker. Keep this plate inside and let it cook in that steam for 15mints
- Cut vattayappam in diamond shape and serve hot with tea as evening snack or for breakfast.
