Chicken Stew

At my home Chicken Stew is the dish we prepare on every special occassion of either X'mas and Easter. And I am sure it is served at every malankara christiaqn wedding. It is a must have. It is yum. The taste of Mutton stew served at our wedding... is still lingering in my memory and tongue. It was mouth watering.



Ingredients:
  1. Chicken/Mutton- 1 kg cut into small pcs
  2. Onion- 3 medium chopped lengthsiwe
  3. Green chilly- 4 nos
  4. Salt- to taste
  5. Curry leaves- a few
  6. Mustard Seeds- a few
  7. Pepper powder- 1 tsp
  8. Whole Cardamom- 3
  9. Cinnaamon stick- 1 long stick broken
  10. Cloves- 3 or 4 no
  11. Bay leaf- a small pc
  12. Coconut milk- Thin & Thick 1 cup each
  13. Sunflower oil- 3 tbp
  14. Corainder leaves- a bunch
Method:
  1. In a wok splutter mustard seeds, cinnamon sticks, cardamom pods, cloves and bay leaf
  2. Add onions, green chilly with some salt salt and saute untill translucent
  3. Add the cleaned chicken and saute for a minute.
  4. Add the thin coconut milk and cook the chicken untill soft in the coconut milk in low - medium flame
  5. Cover the wok with a lid.
  6. Once the chicken is cooked and the water has absorbed half, add the thick coconut milk.
  7. Cook for 2 mints
  8. Finally add the pepper powder and chopped fresh corainder leaves.
  9. Add salt if required and serve hot with Bread , Dinner Roll or Appam.
