Palappam & Chicken Malabari



Ingredients for Palappam:

  1. Double Horse Appa Podi( Rice flour)- 1 Cup
  2. Yeast- 2 pinches
  3. Salt- to taste
  4. Sugar- 1 tbp
  5. Cooked rice - 1 tbp
  6. Coconut Milk- 1 cup

Method:

  1. Grind the cooked rice with some water and make into a paste
  2. In to the paste add one cup of rice flour, yeast , salt, sugar and coconut milk
  3. Stir continously while adding coconut milk so that no lumps are formed
  4. Add if more water is required
  5. Keep the batter to rise for 8 to 10 hours, preferably over night
  6. In to a Palappam Wok, add the batter and twist the wok as to form the shape of palappam
  7. Cover with the lid and cook until done
Tips: Make sure that the batter is slightly runny and not thick like dosa batter.


Ingredients for Chicken Malabari:

  1. Chicken with bones - 1 kg
  2. Mustard Seeds- a few
  3. Cloves- 3 or 4 no
  4. Onions Chopped - 3 large
  5. Tomato paste - of 1 large tomato
  6. Garlic- 3 or 4  cloves
  7. Ginger -chopped- 1/2 tsp
  8. Green Chilly - 2 no
  9. Curry Leaves- few
  10. Red chily powder- 1/2 tsp
  11. Corainder powder- 4 tbp
  12. Garam Masala- 1/2 tsp
  13. Turmeric Powder- 1/4 tsp
  14. Pepper Powder- 1/4 tsp
  15. Corainder Leaves- for garnish
  16. Coconut milk ( think & Thick) - 1 cup each
  17. Salt- to taste
  18. Coconut Oil- 4 - 5tbp
Method:

  1. In a large wok add oil and splutter mustard seeds and cloves
  2. Saute' ginger,galic, curry leaves, onions, green chily and curry leaves until onions become translucent
  3. Add Tomato paste. Make the paste with raw tomatos without adding any water.
  4. Add all the spice powders and put the chicken pieces into it, followed by the thin coconut milk
  5. Cook until the chickn becomes tender and juicy
  6. Finally add thick coconut milk, salt and garnish with fresh corainder
