Palappam & Chicken Malabari
- Double Horse Appa Podi( Rice flour)- 1 Cup
- Yeast- 2 pinches
- Salt- to taste
- Sugar- 1 tbp
- Cooked rice - 1 tbp
- Coconut Milk- 1 cup
Method:
- Grind the cooked rice with some water and make into a paste
- In to the paste add one cup of rice flour, yeast , salt, sugar and coconut milk
- Stir continously while adding coconut milk so that no lumps are formed
- Add if more water is required
- Keep the batter to rise for 8 to 10 hours, preferably over night
- In to a Palappam Wok, add the batter and twist the wok as to form the shape of palappam
- Cover with the lid and cook until done
Ingredients for Chicken Malabari:
- Chicken with bones - 1 kg
- Mustard Seeds- a few
- Cloves- 3 or 4 no
- Onions Chopped - 3 large
- Tomato paste - of 1 large tomato
- Garlic- 3 or 4 cloves
- Ginger -chopped- 1/2 tsp
- Green Chilly - 2 no
- Curry Leaves- few
- Red chily powder- 1/2 tsp
- Corainder powder- 4 tbp
- Garam Masala- 1/2 tsp
- Turmeric Powder- 1/4 tsp
- Pepper Powder- 1/4 tsp
- Corainder Leaves- for garnish
- Coconut milk ( think & Thick) - 1 cup each
- Salt- to taste
- Coconut Oil- 4 - 5tbp
- In a large wok add oil and splutter mustard seeds and cloves
- Saute' ginger,galic, curry leaves, onions, green chily and curry leaves until onions become translucent
- Add Tomato paste. Make the paste with raw tomatos without adding any water.
- Add all the spice powders and put the chicken pieces into it, followed by the thin coconut milk
- Cook until the chickn becomes tender and juicy
- Finally add thick coconut milk, salt and garnish with fresh corainder
