Inji curry / Ginger chutney

Inju curry is something i have tried only once before. Part of Ona Sadya I made Inji curry and my hubby liked this one dish best, among all the dishes I made for Onam.




Ingredients:

  1. Ginger- 2 to 3 numbers
  2. Coconut oil- for frying
  3. Tamarind Pulp- 2 tbsn
  4. Turmeric Powder- A pinch
  5. Red Chily Powder- half tspn
  6. Sugar- to taste
  7. Salt- a pinch
  8. Fenugreek Powder (Uluva) - a pinch or two

Method:

  1. Peel and wash the ginger
  2. Cut the ginger as thinly and small as  possible
  3. Fry the ginger in oil until it completly turns brown ( can be a little time consuming as all the water in the ginger needs to be vapourized, but its worth the taste)
  4. Take out the fried Ginger and allow it to cool for few minutes
  5. Grind the ginger
  6. In a small wok splutter mustard seeds and add turmeric and chily powder
  7. Put the ginger paste followed by tamarind pulp and some water
  8. Add sugar and serve hot. ( Alternatively you can use jaggery and add as much as sweetness as per your taste or until the bitterness of ginger is no more present)
