Plum cake / Fruit cake

Ingredients:

1. Butter - 55gms or 1/4/cup
2. Sugar -3/4 cup
3. Water - 1 cup
4. Glazed cherry halved- 1 cup
5. Prunes chopped - 1 cup
6.Grated ginger- 1 tsp
7. Clove powder/2 tsp
8. Nutmeg powder 1/2 tsp
9. Cinnamon powder-1 tsp
10. Plain flour - 1 & half cup
11. Baking soda - 1 tsp
12. Egg - 2 no:
13. Vanilla essence - 1tsp
14. Salt - 1/2 tsp

Method:

1. In a sauce pan add ingredients from 1-9 and boil until thick

2. In a bowl mix all dry ingredients flour, baking soda and salt. Sieve if needed.

3. Gently whisk eggs and vanila and pour into the boiled sugar mix once it is cool.

4. Using a wooden spoon or spatula fold the dry ingredients in two or three equal parts to the liquid mix.

5. Butter a cake tin and pour the batter into it and bake for 30-40 min at 180 degree until cooked or a straw inserted through comes out clean.

Tip:

If you are using whole spices it will be easier to powder them along with sugar in the blender.

You may use tutti fruti or anykind of nuts of your preference.
