Banoffee Pie
Ingredients:
1. Butter -200gms
2. Digestive biscuits-200gms
3. Condensed milk -400gms
4. Dark brown sugar -100gms
5. Cream lightly whipped -200ml
6. Banana- as much you require to fill the pie depending on size
7.Dark chocolate- for garnish
Method:
1. Crush the digestive biscuits and add 100gms of melted butter to it and mix thoroughly.
2. Tip the mix on to a round short cake tin or spring foam bottom pan and male a pie crust using a spoon. Chill it for 10 minutes
3. In a sauce pan melt remaining butter and sugar on medium heat followed by the condensed milk. Caramelize it by boiling on high flame rapidly mixing with a wooden or silicon spoon continuously and take it off the fire.
4. Pour the mix on to the pie crust and allow it to cool before chilling it.
5. Just before serving add banana topped with cream and chocolate.
Tips:
1. Please make sure that you boil the condensed milk quickly on high flame. If you keep it on medium or low and wait for it to boil the milk will split.
2. Make sure to stir the mix continuously or else it will cause some parts to caramelize and hard.
3. You can make the mix without any sugar like i did but it just won't have that caramel taste.
4. If you want to take the pie off the pan use a spring foam bottom otherwise you can cut them out from the normal cake tin perfectly fine.
5. I used single cream to make whipping cream due to non availability of heavy cream. Whipping up light cream needs more work but it is absolutely fine.
Making whipped cream from single cream:
1. Cut the top of carton and refrigerate cream over night. The thick cream will float upon chilling.
2. The bowl using for whipping and the tongs on the electric beater should be chilled for an hour before whipping to make sure the cream doesn't churn into butter. The same reason why we are separating the thick cream from the thin.
3. Use an ice bath and keep the bowl for whipping on top and whip the thick portion for a few minutes until soft peaks have formed. You may add powdered sugar to it but i did not as the condensed milk in itself is sweet.
