Egg fried rice


Ingredients:-
  1. Basmati rice:- 2 cups
  2. Carrot chopped-1 no:
  3. Capsicum chopped- 1 no:
  4. Onion chopped- 2 no:
  5. Garlic chopped- 1 whole garlic
  6. Spring Onion- few stalks
  7. Egg- 3 or 4 large eggs
  8. Salt- to taste
  9. Pepper- to taste
  10. Soya Sauce- 2-3 tbsp.
  11. Tomato Sauce- 2 tbsp.
  12. Oil- 3 tbsp.
  13. Green Chilli- 3 or 4 no:
Method:-
  1. Soak basmati rice for 20-30 minutes and cook in 1 and a half cup of water until all the water is absorbed on a low flame with closed lid. Do add salt to the water to season the rice.
  2. In a separate non-stick pan sauté garlic, green chillies, onion and carrots until they become soft.
  3. Add the capsicum at the end to ensure it is not over cooked.
  4. Move all the veggies to one side of the pan and with a little oil fry the lightly beaten eggs in the same wok/ pan and scramble them. (Please remember to season the eggs when beating)
  5. Add soya sauce, tomato sauce and pepper powder. Check seasoning and adjust accordingly.
  6. Now toss in the cooked rice, garnish it with spring onion and serve hot with your favourite side dish. Serves 4 people.
Tip:-
  • Seasoning the egg, water and the veggies separately ensures that they are all seasoned well. But make sure that you don't over use salt as soya sauces and any other bottled sauces you use in Chinese cooking will already be salty.
