Egg Curry


Ingredients:-
  1. Hard boiled eggs- 3 or 4 no:
  2. Mustard seeds- a little
  3. Oil- 3 tbsp.
  4. Green Chilly Sliced- 2 no:
  5. Onion Sliced- 2 no:
  6. Chopped Garlic- 1 tsp.
  7. Chopped Ginger- 1/2 tsp.
  8. Curry leaves- a few no:
  9. Black pepper powder- 1/2 tsp
  10. Turmeric Powder- a pinch
  11. Coriander Powder- 2 tsp.
  12. Garam masala- 1/2 tsp.
  13. Water- a cup or two
  14. Chopped Fresh Coriander- a few leaves
  15. Salt- To taste
  16. Coconut milk- 1/2 cup
Method:-

  1. Crackle mustard seeds in oil, followed by curry leaves garlic ginger chilly and onion and sauté until golden brown on medium to high flame
  2. Now add turmeric, coriander, garama masala and pepper powder. As soon as the masalas cooked add water and salt.
  3. Let the liquid come to a boil, now you can add the boiled eggs whole or in half.
  4. Now keep it on low flame and add the coconut milk and it will thicken slightly.
  5. Add chopped fresh coriander and serve with your favourite appams/breads.
Tip:-
  • When you want your onions slightly crisp and brown always add salt in the end.
  • Make sure to reduce the flame when you add coconut milk as it may look grainy in the liquid on high flames
