Padavalanga thoran/ Snake Gourd coocnut stir fry


Ingredients:
  1. Snake Gourd- 250gm
  2. Shallots- 3
  3. Green chilly - 2
  4. Curry leaves- few
  5. Mustard Seeds- few
  6. Turmeric powdr-1/4 tsp
  7. Salt-to taste
  8. Grated coconut- 1/4 cup
Method:
  1. Peel and clean the snake gourd and chop them into very fine cubes
  2. Crush the grated coconut , turmeric powder and shallots and keep aside
  3. Into a wok splutter mustard seeds, add curry leaves green chilly and the coconut mixture followed by snake gourd chopped and stir fry and keep the wok closed with a lid, so as to cook the snake gourd in as much as steam as possible,
  4. Add salt once cooked and serve hot with brown rice
