Mix veg dal curry

This is a dish my M.I.L often makes with chapathi. Its really tasty.
Ingredients:
1. Potato-  2 medium such size
2. Carrot - 1 medium
3. Onion - 2 medium
4. Garlic -8-10 pods chopped
5.Palak- a handful
6. Toor or masoor dal- 1/2 cup
7. Turmeric powder - 1/4 tsp
8. Red chilly powder - 1-2 tsp according to taste
9. Curry leaves - a few
10. Mustard seeds- a few
11. Cumin/jeera- a few
12. Cooking oil - for tempering - 2-3 tbsp
13. Lime juice - 1/2 a lemon
14. Salt - to taste
Method:
1. Pressure cook dal potatoes and carrots and set aside
2. Put spinach leaves( if they have long stalks cut them in bite size) in hot water for a few minutes and put them in a ice bath to retain color and add them to the cooked dal and veggies.
2. Splutter mustard seeds n curry leaves in oil and sauté garlic and onions in them until golden brown followed by turmeric and chilly powder.
3. Add the tempered mix into the cooked veggies and add salt. Let it soak all the flavor in low flame for five minutes.
4. Add lime juice in the end and serve with chapathi.
Tips:-
1. Lime juice helps control the bitterness of palak.
2. Ice bath is just ice with some water. Take the palak out of the hot water and immediately put it in the ice bath. Both this trick you can use in all recipes where palak is used.
3. Serves about 4-6 people
