Pineapple Crisp
This is something my mom used to make for us when we were kids. My mom's recipe is from Mr. K. M. Mathew's Recipe Book.

- Pineapple Chopped- 1 cup
- Marie Gold Biscuit Blitzed- 1 cup
- Butter- 2 table spoon
- Sugar- 2 tbsp.
- Salt-to Taste
- Cinnamon- 1 inch
- Cloves- 1 or 2
- Lemon Zest- 1 tea sppon
Method
- Cook the chopped pineapples with some water along with the cinnamon and cloves until the pineapple is soft and strain off any extra water.
- Grease a cake tin with butter and layer the pineapple on the tin. Note to remove cloves and cinnamon stick before.
- Cream butter and sugar until sugar is dissolved completely and add the blitzed biscuits and mix them together. Add Salt to taste
- Layer the mixture on top of the cake tin, followed by the lemon zest.
- Finally add tiny hoops of butter on top and bake it an oven for 30 mint at 180 degree.
- Serve hot with Ice Cream or Custard.
