Chicken Green Curry
Finally a recipe of my own. This one is something I came up with recently for lunch. Just like that I had an idea and executed it. My Brother in law loved it; so I am happy with the results too. Please do try it and I hope you will love it too. I don't have a pic of this one, but will soon upload it the next time i prepare it.
INGREDIENTS
1.
Cooking Oil- 4 tbsp
2.
Mustard Seeds- a few
3.
Fennel/Cumin Seeds- a Pinch or two
4.
Green Cardamom- 3 no:
5.
Cinnamon Stick- 1 stick of inch stick
6.
Bay leaf- 1 no:
7.
Star Anise-
½ of One
8.
Nutmeg- ½ inch
9.
Cloves- 3 or 4
10.
Ginger Crushed- 1 tsp
11.
Garlic Crushed- 1 tsp
12.
Curry Leaves- 1 Stem
13.
Green Chilly Large- 5 no:
14.
Onion Chopped- 3 medium Onions
15.
Coriander Powder- 3 tbsp
16.
Pepper Powder- 1 tbsp
17.
Turmeric Powder- 1 tsp
18.
Salt To Taste
19.
Potatoes Cubed- 1 medium Potato
20.
Chicken- 1 kg
21.
Water- 1 Cup
22.
Coconut Paste- ¼ cup
23.
Fresh Coriander Leaves- For Garnishing.
METHOD
1.
Marinate Chicken in Turmeric, Salt & Pepper
( Add only a small amt of salt to the chicken otherwise the salt will draw all
the moisture from chicken, leaving the chicken dry)
2.
Add Ingredients from 1 to 21 one after the
other.
3.
Cook the chicken for until 2 whistle on high
flame in a pressure cooker.
4.
Add the coconut paste and garnish with coriander
leaves and serve hot with chapatti or rice.
