Chembu Curry/Yam Curry
Ingredients
- Chembu/Small yams- 4 or 5
- Grated coconut- 1/2 cup
- Green chillies- 4 to 5
- Shallots- 5 nos
- Turmeric powder- a pinch
- Cumin seeds- a pinch
- Mustard seeds- a pinch
- Curry leaves- a few
- Salt- to taste
- Coconut oil- 2 tbs
- Red chillies- 2 or 3
Method:
- First peel the yams and cut them in large cubes and boil in water until soft.
- Grind coconut,3 shallots, tuemric, green chillies and salt into a fine paste
- Add the coconut mixture into the cooked yams. If you find excess water please drain before adding the mixture.
- In a wok splutter mustard seeds, cumin seeds, shallots,curre leaves and green chillies in oil and add it to the yam curry.
- Add salt to taste and serve hot with brown rice.
